I am usually the first to defend keeping&lt;br&gt;nuts in a recipe, because they impart a unique flavor and texture that&lt;br&gt;would otherwise be missed. This bread is an exception. I substituted&lt;br&gt;dried cranberries for the nuts and they worked beautifully.&lt;br&gt;How fat and calories were lowered:&lt;p&gt;  * Used nonfat yogurt instead of butter and sour cream&lt;br&gt;  * Eliminated nuts as described above&lt;br&gt;  * Replaced whole egg with egg whites&lt;p&gt;Nutrition Scorecard&lt;br&gt;(per serving)&lt;p&gt;Calories: before 380, after 189&lt;br&gt;Fat (grams): before 19, after 0&lt;br&gt;% calories from fat: before 44, after 1&lt;br&gt;Cholesterol (mg): before 30, after 0&lt;br&gt;Bread&lt;p&gt;1/2 cup dried cranberries&lt;br&gt;1/3 cup fresh orange juice&lt;br&gt;    1 medium orange, washed&lt;br&gt;    1 cup fresh cranberries, rinsed and sorted&lt;br&gt;    1 cup all-purpose flour&lt;br&gt;    1 cup sugar&lt;br&gt;1/4 cup whole-wheat flour&lt;br&gt;  2 teaspoons baking powder&lt;br&gt;  1 cup nonfat vanilla yogurt&lt;br&gt;  1 teaspoon baking soda&lt;br&gt;  2 egg whites&lt;p&gt;Citrus Glaze&lt;p&gt;  1/2 cup confectioners&amp;#39; sugar&lt;br&gt;    * 5 teaspoons fresh orange juice&lt;p&gt;Preheat the oven to 375 degrees F. Lightly coat a fluted tube pan with&lt;br&gt;nonstick vegetable-oil spray.&lt;p&gt;In a small bowl, combine the dried cranberries and orange juice.&lt;p&gt;Cut the orange in 8 small pieces. Place the orange pieces and fresh&lt;br&gt;cranberries in a food processor or blender. Pulse until coarsely chopped.&lt;p&gt;In a medium bowl, combine the all-purpose flour, sugar, whole-wheat&lt;br&gt;flour, and baking powder.&lt;p&gt;In a large bowl, stir the yogurt and baking soda. (The volume will&lt;br&gt;nearly double.) Using an electric mixer, beat in the egg whites one at&lt;br&gt;a time. Beat in the chopped orange mixture. Add the dried cranberry&lt;br&gt;mixture and beat until blended. Add flour mixture and beat just until&lt;br&gt;combined. Transfer the batter to the prepared pan. Bake 40 to 45&lt;br&gt;minutes, or until a wooden toothpick inserted near the center comes&lt;br&gt;out clean. Remove from oven. Invert and cool 10 minutes on a wire rack&lt;br&gt;(bread will still be clinging to pan). Gently run a knife around the&lt;br&gt;outer edges and remove the bread. Sprinkle with salt. Roast the &lt;br&gt;vegetables in preheated oven for 1 hour, until the pumpkin and onions are &lt;br&gt;tender and golden-brown.&lt;p&gt;Heat broth, simmer vegetables: Heat the broth in a large pot over &lt;br&gt;medium-high heat. Transfer the pumpkin, onion and garlic to the pot. Add &lt;br&gt;enough water just to cover the pumpkin. Bring to a boil over high heat, then &lt;br&gt;de- crease heat to medium-low and simmer gently about 20 minutes, until the &lt;br&gt;pumpkin is very tender. Remove from heat and allow the mixture to cool &lt;br&gt;slightly.&lt;p&gt;Puree the soup: Working in batches, puree mixture in a blender until smooth. &lt;br&gt;Strain the pureed soup into another pot. I just love it and it doesn&amp;#39;t have any citron&lt;br&gt;it it to make it bitter. My mom started making this when I was a small&lt;br&gt;child for Thanksgiving. It is a tradition at our Thanksgiving gatherings.&lt;br&gt;Hope you enjoy this recipe.&lt;br&gt;Judy&lt;p&gt;Mom&amp;#39;s Fruitcake&lt;p&gt;2 1/2 c. self rising flour - divided&lt;br&gt;1/2 lb butter - softened&lt;br&gt;1 1/2 c. white sugar&lt;br&gt;5 eggs&lt;br&gt;4 c. chopped nuts&lt;br&gt;1 oz. lemon juice&lt;br&gt;1 oz. vanilla flavoring&lt;br&gt;1/2 lb candied pineapple&lt;br&gt;1/2 lb candied cherries&lt;p&gt;Oil a tube pan with either crisco or spray with Pam.. Line a tube pan that&lt;br&gt;has a removeble bottom with brown paper sack, cut to size. Make sure to&lt;br&gt;line the tube as well.&lt;p&gt;Chop all the fruits and nuts and mix together and cover with 1/2 c. of self&lt;br&gt;rising flour. Mix into the fruit and nuts.&lt;p&gt;Using an electric mixer, combine the sugar and butter and cream it together.&lt;br&gt;Add the eggs one at a time and mix in between each egg. Add the lemon juice&lt;br&gt;and vanilla and mix well. Add the remaining 2 c. of flour, in small&lt;br&gt;amounts and mix while adding it.&lt;p&gt;Stir with large spoon the fruit/nut mixture, a small amount at a time until&lt;br&gt;all is added. Spoon the cake mixture into your tube pan. Do not pour it&lt;br&gt;into the pan or you will end up with a mess.&lt;p&gt;Put into a cool oven and set temp to 300 degrees for 30 minutes. Then 1&lt;br&gt;1/2 hours at 250 degrees. Check and make sure it is done by testing with a&lt;br&gt;knife or fork to make sure it is done all the way thru. Spread about half of the glaze over the breast&lt;br&gt;meat under &lt;br&gt;the skin. &lt;br&gt;Melt remaining glaze; cool slightly. Stir in bourbon. Brush mixture over &lt;br&gt;outside of turkey. Season turkey with salt and pepper. Pull neck skin&lt;br&gt;to back and &lt;br&gt;fasten with a short skewer. Tuck drumsticks under the band of skin that &lt;br&gt;crosses the tail. If there isn&amp;#39;t a band, tie drumsticks to tail. Twist&lt;br&gt;wing tips &lt;br&gt;under back. &lt;br&gt;Insert a meat thermometer in the center of an inside thigh muscle. The &lt;br&gt;thermometer bulb should not touch bone. Cover turkey loosely with&lt;br&gt;foil. Roast in a &lt;br&gt;325 degree F oven for 3-3/4 to 4-1/4 hours or until thermometer&lt;br&gt;registers 180 &lt;br&gt;degrees F. After 3 hours, cut the skin or string between drumsticks.&lt;br&gt;Remove &lt;br&gt;foil the last 30 minutes of &lt;br&gt;roasting to let bird brown. Turkey is done when drumsticks move very&lt;br&gt;easily &lt;br&gt;in their sockets and their thickest parts feel soft when pressed.&lt;br&gt;Remove turkey &lt;br&gt;from oven and cover loosely with foil. Let stand 15 to 20 minutes before &lt;br&gt;carving. In a small frying pan, toast the cumin seeds until just brown.&lt;br&gt;2. Combine remaining ingredients, except pecan halves and maple syrup, in a &lt;br&gt;large bowl. Mix until blended.&lt;p&gt;4. Pour pumpkin mixture into pie crust.&lt;p&gt;5. In a large soup pot, heat butter over moderate heat and add onions. Cook, &lt;br&gt;stirring occasionally, until softened, about 5 minutes. Add garlic and &lt;br&gt;ginger and continue cooking for 1 minute, stirring constantly. Add cumin, &lt;br&gt;coriander, and cardamom, stirring well to combine.&lt;p&gt;2. Preheat oven to 350F. In a large frying pan, saute the red onion in the &lt;br&gt;olive oil on medium-low heat. Stir in the garlic, celery, savory, mushrooms, &lt;br&gt;and bread cubes, saut&amp;#233;ing for an additional 5 to 10 minutes. Add the olives, &lt;br&gt;tamari, and walnuts, stirring all ingredients together thoroughly for a few &lt;br&gt;minutes. Remove from heat and set aside.&lt;p&gt;2. Prepare the squash by cutting it in half, removing the stem and seeds, &lt;br&gt;then slicing the flesh into wedges about 1 inch wide. The skin of kabocha &lt;br&gt;squash is edible and can be left on, but other squashes will need to be &lt;br&gt;peeled. Place the wedges around the edge of a baking dish, then scoop the &lt;br&gt;stuffing into the center of the dish, covering most of the squash.&lt;p&gt;3. Place the dish into the preheated oven and bake for 35 to 45 minutes. &lt;br&gt;Check to make sure the squash is done by poking a piece with a fork; it &lt;br&gt;should be soft. Preheat oven to 450&amp;#176;F. Halve squash lengthwise and remove stem ends. &lt;br&gt;Scoop out seeds and cut squash lengthwise into 3/4-inch-wide wedges.&lt;p&gt;2. Toss squash with black pepper, 3/4 teaspoon salt, and 2 tablespoons oil &lt;br&gt;in a bowl, then arrange, cut sides down, in 2 baking pans.&lt;p&gt;3. Roast squash until squash is tender and cut sides of wedges are golden &lt;br&gt;brown, 25 to 35 minutes.&lt;p&gt;4. While squash is cooking, mash garlic with remaining 1/4 teaspoon salt and &lt;br&gt;whisk in citrus juice, chile, cilantro, and remaining 1/4 cup oil until &lt;br&gt;combined.&lt;p&gt;5. Transfer to plate and set &lt;br&gt;aside  Pour off all but 2 tblspns of bacon fat from pan. Add the onion to &lt;br&gt;the pan   and saute over medium heat for about 6 minutes and then add the &lt;br&gt;garlic and  cook for another minute. Scrape the onions and garlic into 9x13 &lt;br&gt;baking dish  and spread them around. Set aside.&lt;p&gt;2)Trim the Brussels sprouts, cut them in half if very large. Add the &lt;br&gt;Brussels  sprouts to a large pot of boiling salted water. Boil and cook for &lt;br&gt;5 minutes Drain immediately. Transfer to the casserole, spreading the &lt;br&gt;sprouts evenly     in the dish. Set aside. Heat over to 375&lt;p&gt;3)Combine the milk &amp;amp; chicken broth in a small saucepan. Bring to a simmer, &lt;br&gt;then remove from the heat.&lt;p&gt;4)Melt butter in large saucepan. Add flour and stir with a whisk for about 1 &lt;br&gt;minute  until the flour is light brown. Whisk in half of the hot milk and &lt;br&gt;broth.  Heat and whisk for a minute or so, until thick. Add the remaining &lt;br&gt;liquid and  cook about 5 minutes. Whisking frequently.&lt;p&gt;5)Whisk in Parmesan cheese, mustard, salt, poulty seasoning and pepper.&lt;br&gt; Pour the sauce evenly over the Brussels sprouts. Mince the bacon and &lt;br&gt;sprinkle   over the sauce. Sprinkle evenly with Cheddar cheese and dust &lt;br&gt;lightly with   paprika.&lt;p&gt;6)Place the casserole on the center rack and bake for 30 minutes, until&lt;br&gt;  bubbly and golden brown. Preheat oven to 350&amp;#176;F.&lt;p&gt;2. Combine melted butter and gingersnap crumbs. Press mixture into bottom &lt;br&gt;and up sides of a 9-ineh pie plate. Bake for 10 minutes. Cool.&lt;p&gt;3 Beat egg whites until foamy. Beat in cream of tartar and sugar until stiff &lt;br&gt;peaks form.&lt;p&gt;4 Dissolve gelatin in cold water.&lt;p&gt;5 Combine brown sugar, pumpkin, egg yolks, milk, salt, cinnamon, ginger, and &lt;br&gt;allspice in a large saucepan over low heat, Cook, stirring frequently, until &lt;br&gt;mixture comes to a boil. Boil for 1 minute. Stir in gelatin. Fold in egg &lt;br&gt;whites.&lt;p&gt;6. Transfer mixture into pie shell. Stir constantly until smooth. Remove from heat and stir in vanilla.&lt;p&gt;In small bowl, beat eggs until well blended. Add frosting and flour; blend well. Make and bake 24 cupcakes as directed on box, using water, oil and &lt;br&gt;eggs. Cool in pan 10 minutes; remove from pan to cooling rack. Cool &lt;br&gt;completely, about 30 minutes.&lt;p&gt;Frost cupcakes with frosting. Place remaining frosting in corner of &lt;br&gt;resealable freezer plastic bag; seal bag. Cut small tip off 1 bottom corner &lt;br&gt;of bag.&lt;p&gt;To decorate each cupcake, pipe l-inch mound of frosting on 1 side of cupcake &lt;br&gt;for head of turkey. Make eyes with white decorating icing. Using a &lt;br&gt;toothpick, add a dot of chocolate frosting to each eye. Add candy corn for &lt;br&gt;beak. Cut in the shortening and work it through &lt;br&gt;with your hands until the mixture resembles &lt;br&gt;coarse crumbs. &lt;p&gt;Add the water, 1 tablespoon at a time and &lt;br&gt;work the dough until you have a smooth ball. &lt;p&gt;Wrap the dough tightly and refrigerate for &lt;br&gt;30 minutes. Remove from the refrigerator &lt;br&gt;and place on a lightly floured surface. &lt;p&gt;Roll the dough out until the dough is &lt;br&gt;1/8-inch thick. Divide the rolled dough &lt;br&gt;in half.
